Do I have to use specific air filter for dehumidifier?

Dehumidifier says is the unit to buy/use: https://www.supplyhouse.com/Santa-Fe...idifier-Filter but it's $25/filter (this is actually a 'good' price to compared to other merchants).

Is it fine to just use something like this instead: https://www.allfilters.com/furnacefi.../merv13?p=6470 Or is the recommended one perhaps actually 1" thick so these are a bit smaller?

The manufacturer will always spec out the "best" filter and typically its own product.
The aftermarket ones you are linking to should work just as well.
Basically same specs.

On a separate but related note, do I really need a merv 13 for a dehumidifier in a finished space? I could see if it was in a crawlspace perhaps wanting to go with a 13, but is an 11 better for a finished space (and less stress on the unit)? Or just go with the 13 and assume the unit is made for it so it shouldn't be an issue?

Hard to answer. The 11 will allow for more airflow but just less filtered.
