It is probably froze up because a defrost timer (mounts usually up on the ceiling of the fridge section next to the temp control on later models and on real early models mounted to the chasis behind bottom grill, or at rear) or defrost stat (clamps onto the cold coils in the freezer) failed. Each are very DIY-able if you are at all handy. Each can be tested independently.

Was the fridge running for say at least 1/2 hour straight before making the assessment that it is stil not cooling as good as it should?

Keep in mind that the cooling coils in the freezer are capable of way below 0F. But when the freezer has been defrosted and is now at room temperature inside it, the room temjperature air is being drawn across the freezer coils and blending the temperature. It will take awhile for the freezer temp to come down. If say it still has not come down to near normal cold temps by an hour or so, then either it went into defrost mode on you (if the compressor shut off), which will throw you a curve ball, or you then likely have a major issue like a freon leak or bad compressor, IF the compressor has been running steady without stopping, and still is not sufficiently cooling.
