Odd Freezer Problem
Well, not so much the freezer as something that goes in it. We upgraded appliance over the summer and went with a GE GIE21GMLES for the fridge. For some reason ice cream always goes soft. The ice maker works fine and ice is hard, and frozen food stays frozen, but ice cream doesn't. I keep a thermometer in the fridge and freezer and I've got it down to 10 degrees now. We put some fresh hard ice cream in it yesterday and it's soft already, we've tried different spots in the freezer, front, back, bottom shelf, top shelf, can't figure it out. Who would have thought ice cream could be so difficult.

Trying lowering it a degree at a time.
Too cold can cause adverse problems like ice maker/drinking water lines to freeze.

Make sure the ice cream is not near the door. If I keep ice cream or sherbet near the front of freezer it's soft, but if kept toward the rear it's hard. Things like meat, once frozen will maintain the freeze even if the freeze source is compromised. Things like ice cream or any soft material will loose it's frozen properties quickly if not deep in freeze source.
Also be sure the door is in fact shut tightly and sealed. If you can easily slip a dollar bill between the door and gasket, it's not sealed right.
