Hot water heater wiring

Installing new standard 220V water heater... using 10-3 wire... service center only shows two wires, red and black.... where/how is white neutral wire connected?

The white wire will not be used in this installation. Use a wire nut to cap it off at the water heater and at the panel.

Water heaters are normally wired with 10/2 instead of 10/3. Since you ran 10/3, you have one more wire than you need. Just cap off the white as Tex said.
