running cable atop kitchen cabinets

I have boxed out soffits above my kitchen cabinets which were closed in with wood paneling. We are going to replace the paneling with drywall. While that space is open, I want to add some circuits to the kitchen. I was wondering if cable can be run in these soffits, behind the new soffit drywall but in front of the drywall which covers the actual wall behind the cabinets. If so, can they be laid upon the top of the cabinets, or must they be secured to the studs?

Yes, to everything (even to your either/or question). Be aware that the kitchen is probably the most electrically regulated room in your house, so there are lots of codes. Learn them before you do anything in the kitchen. The $6 green paperback Wiring Simplified lays them out in an easy to understand format.
