Recessed outlet boxes in thick granite walls?

I'm putting up ~3/4 inch thick granite backsplash above my kitchen counters. The current outlet boxes are flush with the sheetrock, these are nailed to the studs ("new work" style). The code wants box mounting to be within 1/4 inch from the surface. Can I legally (to code) shim out the outlets to be flush with the new surface, or do I need to remount the boxes. This would be for California code & will be inspected.

If I need to re-mount the boxes, would my best approach be to use ""old work" boxes that screw clamp to the wall?

You need to extend the box out. The simplest way is with an extender like this.

http://www.bptfittings.com/catalog/catalog_families.asp?tp_id=28&category_id=236&family_id=293

or www.aifittings.com and look for BE1
