Panel Swap
Does anyone know if you can use a 100 amp breaker as the main breaker in a new 200 amp panel? Current service is 100.

Yes, the panel rating needs to be greater than or equal to the main breaker rating. Your plan of using a 100A main breaker on a 200A panel (to get the number of circuits you want/need) is good.

your plans is good however you will need a breaker locking tab to hold that 100 amp breaker.
Will you let me know what manufacter breaker box it is ?
The reason why I ask here due there is so many diffrent catalog numbers so once I know which model or manufacter then I can able give you the right direction.

You may be able to get a convertible panel and install a 100 amp main in a normally 200 amp panel.
Square D only lists the hold down as being for the smaller panels.

IIRC Square D breaker hold downs are limited to no larger than the 8/16 circuit panels.
