adding a thermostat to warming cabinet

Hello! we have an elmira stove with a warming cabinet next to the oven. the cabinet has a 200F bottom element and an on/off switch only. we would like to add a thermostat to use it for yoghurt/sour cream/ kombucha fermentation (80F to 200F range). could anybody recommend a suitable thermostat with a probe? is it ok to put it on the power line before the on/off switch? any other tips? thank you in advance!
we are looking at Amazon.com: Refrigerator or Freezer Thermostat (Temperature Controller): Kitchen & Dining but wonder whether there is something more compact ( a smaller dial or something) out there.

The one in your link will not work. It does not have the temperature range you need.

Is this warming cabinet part of the stove or a separate appliance?
