Wiring additional Garage lightswitch

I currently have a single switch inside the house to turn on the garage lights. It is quite annoying to have to open the door and go inside the house to turn on the lights, so I want to change this to a three-way switch, and add a second switch in the garage.

My question is this: In order to wire to the switch that would be in the garage, I have to go though the insulated wall between the house and garage. Are there any special things I need to do because this is an insulated wall? Can I just route the wire though the insulation and tape the hole where the wire goes though?

Yup. You can just run the cable through the insulation. The penetration between the house and garage will need to be filled as it is a fire wall. You mentioned tapeing which is an approved method for repairing a firewall in a house.
