200 amp service entry panel

On a 200amp service entry panel----would the main breaker be two ganged 100amps, or one 200amp main breaker?

In other words, how much does each leg of the 240vac (120v---neutral---120v) deliver? If the total is 200amps, then it seems each leg would be 100amps.

Each leg will allow up to 200 amps to flow. It is not 100 per leg on a 200 amp service.

(120v---neutral---120v)
That is wrong. It is 240----neutral----240. Each pole of the main breaker has 240 volts on it.
