Ceiling light wiring help needed
I took off and old light fixture and forgot to check which wire went where. I've not come across anything like three white, one red, and three black before.
I tested across the red and white and the wall switch turns it on and off but I wanted to check as I've wired up the light and it made the whole place flicker. Probably dangerous of me to have done that..
I checked with my tester and when the switch is off there's current flowing in the black wires in the box
There's also a brown wire going through the box, but it doesn't terminate out here.
Question is, how do I wire this correctly?

What it is there are muliti curcuits running thru box. They all share the white as it is common. Remove wire nut from white and red. Turn switch to on position. Check voltage between These 2 wires. Should be anywhere from 110 - 120 volts. Return back to switch kill it. Test again power should not be present. If red still has power resecure wire nut test ea black wire. You will keep 1 lead of meter to white entire test. Once you find a wire that has no power between it and white. That is switching circuit and these are wires you wire to fan. It does not matter which fan wire go to which wire but if you have white wire those all together black or red from fan to other wire. Hit switch it should fire. If fan has light kit just wire those 2 wires to hot and common going to fan. Once you find the wires that turn on/ off by switch your done.

The switch has black and red wired to it. The rest of the box is like this:
I have a lot of other things on plugs, tv, amp, cable modem, ps3 etc that seem to be on the same breaker, they all turn off when I flip it off. Could the flickering be due to overloading? how likely is it to be a problem with the fixture itself?

Flickering ??
You are replacing the fixture. After the new one is installed you'll know if it was a bad fixture.

Very little need for testing. The blacks are a hot power in and two black hots out to other parts of the circuit.
I suspect you loosened a connection working in the box. The red is the switched hot.

Yes, I am replacing the fixture.
After 5 mins of the light being on ( an LED light) it starts flickering. I tested 2 incandescent bulbs that both blew and a CFL that also blew. When I opened the light fixture up the molded plastic where the wire connects to the screw fitting seemed like it had been heated, it was clear platic but now looks opaque so I wonder if there's some arcing going on there? I will return it and try a different fixture.
