Wiring my garage subpanel for 240

Hello all, Im running a new powerline to my garage, which is about 75ft from my main, and I am boggled by what to run as I have read so many reviews and threads with contradicting methods! My plan was to run a 8/3 UF through 1" gray pvc, with a 60A at each end. The Existing panel in the garage is a 125A panel. Should I use bigger feed and boost to 100A service? Thanks for any suggestions.

My plan was to run a 8/3 UF through 1" gray pvc, with a 60A at each end.
Best practice is to run individual wires not cable through conduit. 8-3 would be a very hard pull through 1" conduit. 8-3 is only rated for 40 amps. I don't have a clue what you mean by 60A at each end. Can you clarify?
The Existing panel in the garage is a 125A panel.
If you already have a panel you can not run a second panel.
