blank plate for 2 gangbox?
I used this because it's what I had left as a junction box but it seems to hard to find a blank plate for it at the store.
Do they sell blank plates for 2 gang boxes?

I don't know about your neck of the woods but they are available many places here. They mostly come in plain colors.... brown, white, ivory.

The junction box seems to be a little loose as it is installed in a location where there isn't a stud nearby. I can't relocate it to a stud as the existing wire I am extending comes out of the floor and cannot be moved.
Is there a way to reinforce the box? I could screw it into the wood panelling but then it would be secured to the finishing instead of something behind the finishing.

Then what you need is an oversize plate. Example: Leviton 84125-40 2-Gang No Device Blank Wallplate, Oversized, Box Mount, Stainless Steel - Switch Plates - Amazon.com
You might also want decrease the size of the hole by cluing a strip of paneling on the top and bottom of the hole and use Madison clips to help hold the box. The over size plate would hide most or all of the repair.
