House to shed wire
I figured out what I'm doing for my new shed. I'm leaving the hot tub circuit alone. I'm going to run a new 2 pole breaker from the house to a sub panel in the shed. Should I use 10/3 or 10/4 wire and will the sub panel need the extra ground bar?

10-3 UF on a 30 amp breaker assuming a distance of 100 feet or less. Subpanels by code always have a bonded ground bar and isolated neutral. The subpanel will need at least one ground rod.
10-3 is three wires plus a ground, two hots, one neutral, one ground.
Should I use 10/3

If the hot tub is located at the shed then you will have to abandon the hot tub feed from the house if that feed is not able to carry both the hot tub and shed power usage. Then run a new feed, probably 6-3 with ground, instead of the 10 gauge you were thinking of running.
Only one 120 volt, 240 volt, or 120/240 volt feed may run between any two buildings.
