I have made up cover/adapter plates out of metal and paint them to match the wall. Unfortunately I've never seen such a thing in the store.
Changing the electrical box is an option but then you have to repair the wall and repaint which turns it into an even bigger job. Or, you choose a sconce that has a base large enough to cover the electrical box.
