I need a manual switch to use between two 12V batteries.
I want to hook up a back up battery on my trolling motor. Is there a simple switch that I can hook both batteries and the trolling motor up to and be able to switch from primary battery to secondary battery? The trolling motor is the only motor.

The best and easiest way is to get one designed for just such a use. Do a search for "dual battery selector switch". You can get them off Ebay for about $25. I saw Perko and Guest at those prices
I remember guys who just used clamps and switched them when needed, but to do it easily, then the batteries are more exposed.
Now, if you don't have much amp draw, you could cobble something up with a double pole double throw toggle switch (on-off-on) and a mounting box/plate. Probably about $10 of you don't have them laying around.
