power extension outlet for 1800W countertop oven
I have a 1800W countertop oven, I use it with a 15 Amp power strip. Very often the power strip will shutdown itself. I am thinking making an extension outlet by using 12-gauge wire and outlet. Can this 12-gauge wire

If it really is 1800W, it should have 20A plug (which doesn't fit on 15A receptacle).
How long do you need to extend?
There are ready made appliance extension cords. It is only 14AWG, but I think it should be fine for temporary uses.

There are 12AWG ones too, but looks like it accepts 20A plug only.

If this countertop oven stays at the same location all the time, it is best to install additional receptacle for it.

That wire is not suitable to make an extension cord.
Extension cords are for temporary use. You should install a receptacle where it is needed.

As others have said, the right way is to not use an extension cord. If it's really 1800w, it's right at 15A, which is pushing the limits of even a dedicated 15A circuit and 15A receptacles.
If you're definitely going the extension cord route regardless, you'll want to use SO or SJ cable, 12ga, and quality plugs on both sides. Though I'd much rather find a 12ga extension cord and use that instead. Like this one:

You can probably find a shorter one if you look, and likely not in safety yellow too, unless it goes with your kitchen decor.
