That is a dual source three phase motor. It should have reversing built in to the circuitry.
Technically swapping any two input wires will change the direction.
For example.....
U1, V1, W1 ...... reverse U1 and V1.
U2, V2, W2 ..... reverse U2 and V2.
It would be nice to know what that unit is.

I agree Joed. One problem is there are two sets of motor windings.
Do you swap one pair of each set of windings ?
Or is one set for forward and one for reverse ?

For what it's worth, the marketing docs refer to it as an induction motor.

That is one heck of a food processor with a 3HP motor.
Blixer 5 - 3 HP, three phase, two speed, 1725/3450 RPM
I have to ask why would you want to reverse the direction of the motor.
Regardless of the reason reversing two supply power leads should reverse it unless it has some sort of VFD motor controller.
