Controlling Exhaust Fan

I'm using an attic exhaust fan as a shop exhaust fan. It's a 120 volt, 3.1 amp motor. Can I use a 600 watt dimmer switch to control the fan speed?

Probably not. The dimmer can handle it, but I don't think the motor will last long with reduced voltages.

How else can motor speed be controlled? Doesn't the speed control on a ceiling fan just reduce the voltage via a rheostat?

No, it adjusts phase cutoff. Some motors don't like to be controlled that way. My advice would be to get a variable
speed or multi speed motor, and a proper speed controller
for that type of motor.
