We recently had new windows put into our house on a wall that has 4 electrical outlets. We had to install a thicker piece of drywall across the wall, so now the 4 outlets that we have are sunken in a bit more than normal, thus not allowing to put the plastic covers on.
The outlets are about 1/4 inch deeper than they need to be, yet there is no way to get them out of there (they are screwed into studs and whatnot.)
Is it safe to just use a few washers to make up for that gap? if not, what should i do?

There are box extenders and spacers specifically made for this purpose. However, you are only supposed to have a 1/4" setback from the finished edge of the wall to the front edge of the outlet box. If you are right around 1/4" the spacers would be the easiest way to go. Either product can usually be found at the big home centers. Just make sure you get the receptacles in there tight so they don't move around when plugging and unplugging cords.
