James Hardi lap siding requires horizontal flashing over window trim. The Hardi window trim that I'm using is 3/4" thick and I cannot find any horizontal flashing that steps out that far. The most that I've found is closer to 1/2". Any suggestions as to how to proceed? Also, should I install it over my garage and swinging door trim?

The 1/2" deep flashing that you're looking at is probably z-flashing, which is used with 4x8 sheet siding, like T1-11. What you need to ask for is dripcap. It usually protrudes 1 3/8", and it has a 1/4 downward bend on front. And yes, I would install it over the top of every horizontal piece of trim.
If you'd rather have something that fits tighter to the trim, you might have to make it yourself with a metal brake out of sheetmetal or painted trim coil. Just note that hardiplank cannot be in contact with bare aluminum due to corrosion.
