Need some advice, about to replace the siding on my house...
My house is about 30 years old and I am about to replace the siding on my house and I was thinking then once the old siding is ripped off, should I take the wrap off as well as the plywood off to do a thorough insulation job? I was thinking to using spray foam. Of course I would be spraying the foam from the outside and it would be adhering to the sheet rock. Is this a good approach? Any suggestions would be greatly appreciated.

If your house is only 30 yrs old, it should already have adequate insulation in the walls. IMO, it would be unnecessary.

That large of a spray foam job is not DIY friendly. The DIY kits are quite expensive and there is a definite learning curve in their use. While I disagree with X about the "adequate" amount of existing insulation the economic return of re-doing, especially with spray foam, will likely be measured in decades. Retro-fitting additional insulation is rarely cost effective.
