Can I use MDF board for my soffits?

I've seen drywall used for soffits so the answer would be yes ...... but why?

Not a good idea... it's not an exterior product, and will swell if it ever gets wet.

Yes you can but there are many better options. MDF and water do not mix, even when painted. MDF will brake off a corner if nailed too close. Nails in the field will pucker MDF.

Options, Hardie board. Ply wood. PVC. Vinyl. Aluminum.

I would use plywood or a premium OSB like Advantech. MDF is simply too susceptible to damage from water.
