Installing siding over old wood siding

I have that old masonite siding on my house or the engineered siding that whenever it gets wet and falls apart basically. I'd like to put something on top of it that's a little more rigid like vinyl siding or Hardie Siding. My question is what do I do once I reach the wood soffit and fascia? Do I remove that and replace it with my vinyl or do I leave it? I haven't found any videos are instructions or advice on what to do with that. Any ideas

The right way would be to remove what's on there now, then replace with the new siding.
By removing it you can check for the likely damage that's behind it and not have to deal with having to build out all the window and door trims.

Yes it sounds like it is damaged so I would replace it.
Also this makes it easier to work around windows and doors,.
I would also add a house wrap. (Tyvec etc.)

The siding is fine, all of it is in wonderful shape. It looks dated. The house is already wrapped. I want to add value to the house. It's too hard to remove the old stuff.
