Question

I'm installing a custom barrel stove in my garage and need to know what would be best for a fire wall behind the stove. Would fire resistant sheet rock do if there's air space between the resistant sheet rock and the pine planks used to face the wall?

Cool

I believe that I would use an insulated, metal reflective-surfaced floor panel that is designed to go under indoor stoves, rather than sheetrock. Airspace is a good idea.
Sheetrock is fire-resistant because the gypsum in it retards fire, but it is still covered with paper.
Check at a Home Center or fireplace store.
Good Luck!
