Unhappy old house subfloors

My wife and l have an old house that we are fixing up and the floors are bad l mean all the floors in all the rooms are difrent some roll up and down and some roll to the center of the room there is not a level floor in the house .
so what can l do to fix it?

It sounds like it is not just a subfloor problem as it is a problem with the support system of the floor joists/beams. This must be resolved first before doing anything with the subfloor. It's time to break out a transit and check the variances in height. You may want to have someone look at this as they have the equipment to do it right. Then you can go ahead with what you want to do with finish flooring.

Bear in mind that this may alter current door openings and cabinets. Be preapred to start patching walls. The pros can explain this to you and prepare yourself for some repairs and maybe new doors if they have already been cut to fit irregular openings due to the current problems that have been getting worse with age. In some cases, new support post footings will be required as older ones may not be sufficient for the load or soil conditions are questionable.
