Creating a vaulted or tray ceiling

I am taking out some small, non-loading bearing walls. The kitchen is in the middle, the dining room is on one side, while the living room is on the other. with the walls removed I think the space be greatly benefitted if I could raise the ceilings either by tray, or vault. D

Does anyone have any suggestions on a good way to do this with an existing stick framed roof. The span is about 16' wide and 30' long.

There are really too many variables for us to be much help. Too many unknowns. Since you are dealing with a ceiling, which is just below your roof, which is a very important part of your house, I would suggest an architect or engineer to look at your project and they can give you a better answer then we could.
