Question Polyurethane over linseed oil

I just purchased a used pine bench and table that has only been treated with linseed oil. I would like to stain and/or polyurethane them to protect them for daily use. Do I need to do any special preparation before applying stain and/or polyurethane? How many coats of polyurethane should I apply on the table top to make it possible to put a glass on it without getting a white ring?

Strip them and stain as you wish. Pine is challenging to stain evenly.

I would apply at least 3 coats of polyurethane. It is easier to apply thin coats repeatedly than to deal with bubbles trapped in a thick coat. Lightly sand 180 between coats.
