Refinish 12 year old oak cabinets

I have 12 year old oak cabinets that have not been stained but they have yellowed significantly. I assume that the original finish was poly of some kind. I have 2 questions: 1. What is the best way to get the yellowed poly off? If striper, what would you recommend? 2. Once I strip and sand the cabinet what kind of finish can I use so they don't yellow over time again?

Most any brand of stripper should work fine. For vertical surfaces, semi-paste tends to be less inclined to run. Strypeeze and Kleen Kut are good.

Water-based polyurethane does not yellow, unless you specify one that has an amber tint added to it.
