Applying polyurethane

I have my own notions of how to apply polyurethane to raw wood. However, I need to do some countertops constructed of hardwood flooring and my dear wife (of 51 years) will be scrutenizing my efforts like a duck on a worm! Thought I might see what folks say that know what they are doing. If someone has advice or references, I'd appreciate it.

tell you wife that you need something from the store and then
get the first coat on. thin is best, sand and tack inbetween.

why not just stain and then apply a paste wax that can be refreshed
when needed? or not stain and then paste wax.
