Refinishing pine table top

I have a large tressel kitchen table that I made out of eight quarter pine & finished with Jacobean dark stain 30 years ago. It now shows wear and my wife would like it to be natural color. My concern is with the ends of the table that are sanded and stained (end grain). It has several layers of polyureathane finish that I sprayed on. I think removing the poly. & bleaching would be good for the top. but what about the end grain. In the long run would I be better off keeping existing color & refinishing.

strip and sand end grain.
use 60 grit
use bleach for whole table
if you cant get the end grain where you
want it, then maybe just paint the end grain a
matching colour to whatever stain you choose.
then top coat whole table.
or maybe a semi opaque stain for the end grain only.
that matches your stain for the rest of the table.
