Question scrubbed kitchen table

Hiya all,

can anybody tell me how to prepare a kitchen table top to give it a 'scrubbed bleached' look?
I have a choice of timber that i can use for the top, but i need it to look like a 'country farmhouse' table and the scruubbed look is just what i need.

Does the timber need to be old and well seasoned, or can new timber be 'prepared' to look the same?
Any suggestions please?

For a butcher block, scrubbed table top, I would think rock maple.
