kitchen cabinets, clear lacquer is coming off, need advice on re-staining

I have 5 year old custom made cabinets, solid maple. I noticed that some of the lacquer is coming off. The ones above the stove where the steam is rising to and some other's that are not around the stove. I can see some streaking How can I touch these area's up and not make a mess? I don't want to damage the wood above the stove due to the lacquer being removed.

You'll need to sand off the failing coating and recoat. Are you sure it's lacquer? can you find out for sure what type of finish the cabinet manufacture used?

There are some brushable lacquers on the marked but I've never used them. Poly might also be an option.
