Sand between polyurethane coats

I'm in the process of refinishing an old bird's eye maple dining room table and have gotten to the point where I've applied the first coat of polyurethane. Do I sand again before applying another coat? If so, what grit sand paper do I use and exactly what else do I do, if anything?

You need to sand everytime before applying another coat of polyurethane. I would suggest 240 grit wet/dry, lubricated with water for this sanding. After the next coat, if you intend to apply a a third, sand with 400 grit wet/dry.
After sanding, wipe the surface down thoroughly to remove all the debris, then allow the piece time to finish drying from the water you used in sanding.
