Weatherstrip to fit top and sides of garage door...

I'd like to install weatherstripping to the top and sides of my brown wood 7' x 16' garage door. The problem is that the jambs have casing/trim along the edges of the jambs close to the door where the stripping would be attached. The flat part of the casing is 1-1/2" wide and then tapers off for another 3/4". The weatherstripping I've found is wider than 1-1/2" and would overlap the casing it would be attached to. I found a less desirable flexible product on a roll that has a 1/2" fastening edge and 1" flap, but it only comes in white. I was told that painting has not been tested on this product. I'd prefer to avoid the peeling and chipping anyway. Any suggestions on what I should do?

Sounds like you need to remove the tapered trim and replace it with something flat that is wide enough to put a standard weather strip on top of. Can't see it though, so it's hard to say exactly what you should do.
