Possible to reshape fig, from bush to tree?

I have a fig tree that has grown into a large, low bush like shape about 8' across and high. It has about 4 or 5 main branches that split off right at the ground so there really is no 'trunk'.

Would it be possible to cut off all but one of those branches and slowly train that remaining branch into a trunk? I'd like to get it off of the ground and have it look more like a tree so I can mow around it without damage.

Figs will grow from new growth spurts every year. I had one about the size you have, and accidentally swung a bush hog over most of it, taking it to the ground. The next year was the best figs I ever had. Figs are basically bushes, although they are called trees.

So would you say cut it all back and start with all brand new growth? If so, how much do I leave?

Keep in mind that none of the exising branches go up like a trunk does. They all spread out horizontally.

Or should I leave one branch and could I bend it upward, well braced with a stake to try and get it going vertical?

The new growth will emerge as individual "limbs" from the ground. There can never be a central "trunk" to create a tree. There may well be a dozen or more emerge each year that will bear figs. Now, others may have better ideas, but I cut mine back every winter to just above the ground and wrap the limbs with burlap to help them over winter. In the spring, they look dead....but before you know it they are 5 or 6 feet tall.
