worried about water
I imagine it will take me awhile to build the framing of a 2 story home I hope to build someday will the rain ruin the subfloor or framing in the mean time before I can get it dried in?

Yes it can. Get dried-in as quickly as possible.
Water does more damage to homes than any other thing over the life of a home.
