Running Aprilaire 500 with Fan While Heat is Off - Ecobee Thermostat

I have an Aprilaire 500M humidifier with an Ecobee thermostat. The issue that I'm having is that the heat has not been running that often. As a result, I can't get my humidity increased sufficiently. I'm aiming for about 35%, and I'm at 25%. I read somewhere about someone listing the humidifier as a steam model on the Ecobee configuration. From what I understand, this allows the humidifier to run with just the fan. It appears that for this to work, you need to have hot water. Mine is running off the hot water supply. Is this something that is possible? Are there any issues with doing this?

Not really any issues. Non heated air doesn't carry moisture well so humidifying cool air is not terribly cost effective.
