I found some mice had torn open a bag of grass seed in my garage. I have since sealed an opening and caught 5 mice in traps in the garage. I still have traps in the garage and it's been 2 weeks since I've caught another mouse. As I've started to clean up, I've found hundreds, maybe thousands of droppings. The mice could have been in the garage for only 2-3 weeks at best. Is it possible for 5 mice to have left so many droppings or was the infestation much larger?

5 mice with plenty of food can make a big mess in a couple weeks. You've probably gotten them but I'd leave the traps and possibly some poison bait out for any stragglers.
I have similar problems when the mice try to come after the farmers plow their fields. The mice are not so bad but we often get snakes also coming in to feed on the mice. Not fun. One morning I quickly pulled on my boots only to find a mouse squirming around under my foot in the boot. What a way to start the day.
