Insulation questions

Hi all

As you may guess i am new to this so please be gentle on me !!

I am in the process of converting a detached garage into office space. The walls are single width brick and the windows are double glazed. Do I need to insulate the walls before using the space?
If so what with ? Does it have to be a waterproof/dampproof insulation, or will any old insulation do ?
For the floor I am oing to raise the floor a couple of inches with battens to gat off of the concrete floor currently there - is this correct?

Any advice would be greatly received

What is your local climate?
Is the space going to be heated?
How will the interior walls, ceiling, floor be built?
What finish materials do you plan to use?
What condition is the exterior in (walls, roof)?
Will you keep the garage door?
How handy are you?
