2x8 insulation

New guy here, great site!

i have 2x8 ceiling joists in my kitchen, half is covered by the upstairs floor and half is open. would it be more benificial to use r-13 doubled up (v/b only to kitchen side) to fill the 7 in space, or just use r-19 and leave an inch open to the upper floor? tia

R19 will work and be less labor. Insulation should not be tight against roof and ceiling anyways. It should have some air space anyways.
