Insulation on unvented Roof

First, thanks for all advice and shared expertise. Considering cathedral ceiling in small attached bedroom to gain ceiling height. space is 16 long and 10 wide, Standard gable roof runs the 16' length. Soffit are sealed with 2x4. I was wondering if I can insulate the rafter bays to then allow sheetrock on the rafters without having to vent? I saw that the proper method is foam board on outside under shingles, above sheething, but I am not replacing roof soon? I was thinking of filling each bay with layers of rigid foam and use expanding foam to seal the edges, or getting foam blown in. is this enough of a vapor barrier.
