Sprinkler valves

I am replacing my sprinkler valves for the first time and was wondering if I could get some pointers??

Do you use unions on the valves?? If so, on both sides??

The connector is threaded, should I use teflon tape, pipe dope or a combo?

How do I check for leaks before completely gluing everything?

no, you don't need unions unless the pipe you are using on the out-put side of the valve is glue type pvc, I use black polyethelene that is clamped on a barb that threads into the valve which acts as a union, I also use ptfe pipe thread compound, being careful to not overapply as excess could foul a geardrive head, although in the last 20 years I have never had such an incident.
