Question mulberry tree

My mulberry trees are 3 years old and need to be trimed
but we have know idea how to do it or what time of the year it should be done. We are in the desert of so. cal. and they grow very well, very quickly and make great shade trees. I don't want to damage them.

I also have a tree that bears plum like fruit but small about the size of a walnut, and 3 inch spikes on it's branches.

If you aren't sure how to prune your tree, have a certified arborist (not someone with a chainsaw and pickup truck) do it for you after you read up on pruning. Watch how it's done so you can prune the next time around. Pruning is a bit of science and a bit of art. Have the arborist explain why they are doing what they are doing. They might even be able to id your tree with the thorns. I suspect it's some type of citrus.
