upgrade to T8
I want to upgrade some fixtures from T12 to T8. 2 F40T12 bulbs. The fixture has 2 yellow, 2 red, and 2 blue. The ballasts that seem to be available in the stores have 2 blues and a red . Will this work?

Yes, with some minor rewiring. The diagram is on the ballast.
If I remember correctly, one blue will go to both terminal on one lampholder, the other blue to the other lampholder on the same end of the fixture (other bulb) and the red to all 4 terminal points on the other end of the fixture.
Hopefully if I am wrong, one of the other guys will correct me.
You will be able to reuse the sockets with no problem.

No corrections needed nap. Ballast wiring can be slightly different from mfg to mfg. Just follow the drawing on the ballast. What you discribed is the most common wiring diagram.
On a side note, most of the time when a ballast has two wires of the same color or marking, they are actually the same electrical point attached together inside the ballast.
