Question about converting a single ceiling light to three

We're in the process of building a new home and have a question about the ease of installing a new ceiling light. Currently, the kitchen has a spot for a single ceiling light centered above the island. We'd like to convert this to three pendant lights, similar to something like this. My two questions are:

1) Since these are all staggered, the existing centered light isn't needed. Will I be able to easily move this a foot or so without installing a junction box and blank plate? I'm hoping I can pull back the wire a foot or so, install a new box for one of the three new staggered lights, and re-run it to the next.

2) Adding the other 2 lights are just a matter of running off the existing light and installing boxes for each light, correct?
