Shallow 3 Gang Box

I want to install a 3 gang box for 3 light switches (including some dimmer switches) in a shallow location that is only 2 1/4" deep.

Is there a compliant way to do this?

Your problem is not only compliance it's the depth of the dimmers too.

What do you plan to end up for wiring there ? You would need to count the individual conductors to determine box fill.

Based on past experience I'd say three switches may be a possibility but dimmers would be out.

3 light switches, probably 2 with dimmers. One of the standard 3 gang boxes is around 2.74 deep. Should that be deep enough for dimmer switches?

That should be deep enough for wiring and dimmers.
You still need to watch your box fill with wiring.

My questions about a shallow box were related to trying to find a way to place these 3 kitchen light switches on the right side of the entrance to our kitchen, but I think I need to reconsider my options to the left of the doorway.

Doorway is in corner of kitchen. L shaped counter run starts immediately to the right of doorway. Left side of doorway is in line with the left wall of the kitchen, and then the left wall immediately begins with a 3' pantry door. So, the only option for placing switch on the left side of the kitchen doorway would be 3' into the room on the right side of the pantry door.

While this left location is 3' into the room, it is completely free of any obstructions.

Is this left location good, or should I continue to explore options on the right which involve adjusting the cabinet plan to make room on the right?

It's hard to get a feel for the room without a picture but switches three feet from the door are still ok. It's mostly about preference.
