Can you re-center a light fixture without re-wiring?

Can you re-center a light fixture without re-wiring?

I currently have a 16 inch light fixture centered over a 15 inch recessed medicine cabinet. I'd like to replace the current medicine cabinet with a 30 in surface mount but then the light won't be centered above it.

If I buy a wider light fixture, must the power always be connected in the middle of the fixture or can i splice an extension underneath it that would allow the power to come in under the far left of the fixture instead, eliminating the need to re wire? I'm not sure if it's possible or even safe to do so

Most lights require a box to house the electrical connection. Since that is normally the base of the light fixture - you can't move the light without moving the box. A fluorescent fixture is normally an exception because the connection is made inside the fixture.
