Replace 4-position 3-speed fan switch with wireless control?
I have a 4-Position 3-Speed fan selector rotary switch similar to the pictures below. It's mounted on a wall plate so that I can select the speed of my HVAC fan. I was wondering if there are any wall-mounted wireless devices on the market that I can replace this with so that I can control the fan speed remotely? The typical smart thermostat doesn't cut it since they are not meant for line voltage and are only single-speed.
Background: My overall goal is to redo how my HVAC system was set up in my condo. It's a water-cooled AC system where the cooling is controlled by my thermostat (opens and shuts a valve controlling the cooled water) but the fan motor is a separate manual rotary knob located in another part of the home. It's always been a pain to remember to turn on or off the fan when the AC is on or off and also when I want to change the fan's speed. I'd like to try to automate the system so that I can turn the AC and fan on/off wirelessly and simultaneously.
I have a dimmer switch and a regular switch on a 3 way circuit controlling my ceiling recessed lighting. I’m wondering if I can eliminate the 3 way circuit and get rid of my dimmer switch. Is this way more involved than just popping the dimmer switch out and reconnecting the wires leading to it? There are 2 separate groups of wire leading to the dimmer switch one with a red, black and white and the other with just black and white. I wish I could explain it better but I know nothing about wiring. In the picture there are 2 red wires and a black wire coming from the dimmer switch. One of the red wires is connected to the red wire from the group of 3 and the other red is connected to the black of the group of 3. The black wire from the switch is connected to the black wire of the group of 2 wires. The white wires from the group of 3 and 2 are connected.

So over the years I've installed a total of 5 different ceiling fans throught our home. What I don't understand is how some of them spin really fast and blow alot of air. While others don't. Is it wattage, amps, CFM rating? Or just something I did wrong. I have all of them installed on speed switches with 3 different power levels. Just something that's perplexed me for over 10 years now.
