How do you know when to replace the bar on a chainsaw??

When it's bent/warped - or the chain groove allows excess wobble in the chain. If you have to ask... it's probably time to replace it.

When the channel gets sloppy, worn, or mushroomed from the chain sliding across it (can be repaired if that's the only problem), if the roller tip wears out, if it has been overheated, or if it is warped or bent/misshapen.
